Quick fixes for when you're in a fix


Three favorites:
Puck's Chicken (Steve G's invention)
Enchies
Souped-up Minestrone

Puck's Chicken
1 jar favorite spaghetti sauce
1/2 jar of alfredo sauce
2 Chicken breasts, cooked how you like and cut up
sliced mushrooms, if you have them
bowtie pasta

Combine the first 4 ingredients, heat, and serve them over cooked pasta. The kids love it and it's ready in a jiffy. Serve it with toasted bread slices sprinkled with parmesan cheese if you don't have any french bread.


Enchies
2 small cans pork n beans
1/2 can enchilada sauce (we like mild)
1/2 - 1 lb cooked ground beef (I like to cook batches and freeze them)
grated cheese
flour tortillas
any fresh toppings you have: lettuce, tomatoes, salsa, sour cream, avocadoes

Combine the first three ingredients, heat, and serve them over the tortilla (tostada style). Layer with cheese and assorted fresh toppings. My kids especially love to drip a little ranch dressing over the top. Then we cut it into 1 inch squares and eat it - good stuff. I think it's my mom's invention.

Souped-Up Minestrone

2 cans Campbell's Minestrone Soup
1 can water
1 can pork n beans
1/2 lb cooked ground beef

Combine, heat and eat. I like to whip up some cornbread muffins to go with this soup. Yummy!

Chicken casserole:
2 cans of chicken broth
1 can rice (abt 2 cups)
1 c. grated cheese
2 chicken breasts, cooked and cubed

Dump it into a casserole and bake for 1 hour at 350. Stir a bit to mix in the cheese, and salt to taste. My kids also love a little Ranch dressing with this one too. Doesn't Ranch make everything tastier?

That Puck's Chicken sounds amazing. I too may try all three of these.
My friend came up with a great idea for a restaurant in college. She was going to call it BOBOR for "Big Ol' Bucket Of Ranch" and everything would be served with just that! :)

I think my husband doesn't understand the ranch obsession, but dang, it makes almost everything taste better.
